Dominoes with poppy seed and plum jam filling

Ingredients for 1 servings:

  • ½ tsp potash
  • 3 tsp egg white
  • 375 g honey
  • 450 g flour
  • 4 tsp gingerbread spice
  • 1 packet of baking powder
  • 5 tbsp rum
  • Flour , for editing
  • 250 g plum jam
  • 1 pack of poppy seed cake (250 g)
  • 300 g dark chocolate coating
  • 300 g cake icing, dark
  • 50 g white chocolate coating

Instructions

Working time approx. 2 hours; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 25 minutes

for approx. 60 dominoes

Dissolve the potash in the egg whites. Using the dough hook on a hand mixer, combine the honey, flour, gingerbread spice, baking powder, and rum until smooth, then knead in the dissolved potash. Wrap the dough in foil and chill for 1 hour. Divide the dough into 3 pieces. Roll out each piece on a floured surface to 30 x 25 cm. Place the first sheet on a baking sheet lined with baking paper, pierce several times, and spread with plum jam. Place the second sheet on top, pierce several times, and spread with the poppy seed mixture. Cover with the third sheet and pierce as well. Support the edges with several folds of aluminum foil. Bake in a preheated oven at 175°C (top/bottom heat) on the second rack from the bottom for 20-25 minutes, then let cool. Divide the dough sheet into 5 x 2.5 cm pieces. Chop the dark chocolate coating and glaze, and melt in a hot water bath. Dip the dough pieces into the dough, drain well, and let dry. Decorate with melted white chocolate coating. Makes approximately 60 dominoes.
