Ingredients for 10 servings:

  • 5 kg potatoes
  • 8 onions
  • 8 sausages (Mettwurst)
  • 250 g bacon, streaky
  • 5 eggs
  • 3 tbsp flour
  • 3 tbsp salt
  • ½ tbsp nutmeg
  • n. B. Pfeffer
  • 4 tbsp oil

Instructions

Working time approx. 55 minutes; Total time approx. 55 minutes

Peel and wash the potatoes and grate them as you would for potato pancakes. Squeeze out the grated potatoes and drain off any excess water. Peel and finely dice the onions. Slice the Mettwurst and dice the bacon. Preheat oven to 220°C fan/gas mark 3. Place the potatoes, onions, eggs, flour, salt, pepper, and nutmeg in a large bowl and mix thoroughly, then add the sausages and bacon and mix. Cover the bottom of a roasting pan with oil. Heat on the stovetop and tilt the roasting pan so that the sides are also greased. Turn off the heat, but leave the roasting pan on the warm stovetop. Using a slotted spoon (so that any excess water can drain off), pour the potato batter into the roasting pan, fry briefly (without stirring), and then roast uncovered in the preheated oven for about 2 hours. If the crust browns too quickly, put the lid on and/or reduce the heat to 190°C fan-assisted.
