Ingredients for 4 servings:

  • 1 swede(s) (Dotsche)
  • 300 ml water, possibly more
  • 2 tbsp vinegar
  • Sugar
  • Salt
  • 1 bay leaf
  • 2 cloves
  • 2 grains allspice
  • 3 juniper berries
  • 1 chili pepper(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

goes very well with ox breast and Reiberdatschi

You make a broth from water, vinegar, salt, and sugar, add the peeled and grated beets, and cook the beets with all the spices until tender. Be careful, test the beets often; if the beets aren’t cooked enough, they won’t taste good. If they’re cooked too long, they’ll turn into a mush.
