Ingredients for 1 servings:

  • 50 g hazelnuts, ground
  • 2 egg whites
  • 100 g sugar
  • ½ vanilla pod(s) (seeds)
  • 1 tbsp flour
  • ¼ tsp cinnamon
  • 110 g nougat, firmer

Roast the nuts without adding any fat and let cool. Preheat oven to 120°C (100°C fan-assisted). Beat the egg whites until stiff peaks form. Slowly add the sugar and beat until stiff peaks form. Combine the flour, cinnamon, vanilla seeds, and nuts and fold in. Immediately fill a piping bag with the mixture and pipe cherry-sized dots onto a baking sheet lined with baking paper. Bake for about 20 minutes. Heat the nougat and place it on top of each cookie.
