Duck breast fillet à la Didi

Ingredients for 2 servings:

  • Duck breast fillet(s)
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tbsp sunflower oil

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Make diamond-shaped cuts in the skin-side of the fillets (not too deep, so as not to damage the meat). Rub them all over with sunflower oil and season with salt and pepper. Heat a dry pan over medium heat. Place the duck breast skin-side down in the pan and cook over low to medium heat for about 15 minutes. Turn the meat over and cook for another 5 minutes. Wrap the cooked duck breast fillets in aluminum foil and let rest for 10 minutes. Plate up and serve.
