Duck breast with tropical mustard and fruit sauce

Ingredients for 4 servings:

  • 4 duck breasts, each approx. 200 – 250 g
  • 2 tbsp soy sauce
  • 2 tbsp white wine
  • 5 tbsp coarse-grained mustard
  • 400 ml chicken broth
  • 400 ml cream
  • 4 tsp sauce thickener or flour
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Score the fat layer of the duck breasts in a diamond shape. Mix the soy sauce with the wine and pepper and spread it over the pieces of meat. Fry the duck breasts, fat side first, for about 10 minutes on each side, then keep warm. Combine the mustard, stock, and cream and bring to a boil in a pan. Stir in the sauce thickener and bring to a boil briefly. Cut the drained fruit into small pieces (e.g., cubes) and warm them in the sauce. Serve the duck breast with the sauce. Serve with potatoes or fries.
