Ingredients for 4 servings:
- 500 g milk
- ½ vanilla pod(s)
- 35 g cornstarch
- 60 g sugar
- 2 egg yolks
- 1 egg white
- 1 pinch of salt
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Scrape out the pod and add the pulp to the milk. Combine the egg yolks and sugar and beat until frothy. Stir the cornstarch into a small portion of the cold milk. Bring the remaining milk to a boil and then whisk in the cornstarch. Bring the milk to a brief boil and stir it into the egg-sugar mixture. Whisk the egg whites, adding a pinch of salt. Whisk the egg whites until stiff peaks form and fold them into the pudding mixture. Then ladle the pudding into bowls and cover with a damp kitchen towel. Serve at room temperature.
