Dumplings: Grandma’s Bohemian Dumplings

- 1 piece Fresh onion
- 1 tablespoon Clarified butter
- 1 handful Chopped parsley until smooth
- 125 ml Milk
- 100 g Flour type 550
- 2 piece Eggs “M”
- 1 Knife point Baking powder
- Salt
- Roasting tube – my grandma didn’t have that yet !!
- Heat the clarified butter in a very large pan – I used the wok pan for this. Peel the onion and chop finely.
- Fry the diced bread rolls and onions until golden, stirring constantly. Finally stir in the chopped parsley.
- Mix the flour, milk, eggs, salt and baking powder into a smooth dough and pour over the toasted bread cubes. Mix everything very well and let it steep for half an hour.
- In the meantime, bring water to a boil in a saucepan – I also used the wok pan here.
- Form two long dumplings out of the dough. It is important to press them together very firmly.
- Place the two dumplings separately in a roasting tube, close it tightly and cook the dumplings covered in boiling water for about 30 minutes. Turn around again and again in between.
- Take out, remove the foil and cut approx. 2 cm thick slices.
