Ingredients for 4 servings:
- 500 g flour
- 3 eggs
- 1 tsp salt
- 3 onions
- 300 g bacon
- salt and pepper

Poor people’s food or when frugality is king
Mix the flour, salt, and eggs and slowly add water until a firm dough forms. Bring a large pot of salted water to a boil. Use your fingers to tear off small, fingernail-sized pieces of dough and add them to the boiling water (they will expand in the water). Don’t add too many dumplings to the water at once, as they might stick together. When the dumplings rise to the top, remove them from the pot and let them drain. Gradually work the dough in this way. At the same time, melt some fat in a pan and fry the diced bacon. Add the onions and fry until browned. Instead of bacon, you can also use leftover sausage or other meat. Finally, add the dumplings, mix everything together, and season with salt and pepper. This dish is typical poor people’s food from a time when there wasn’t much else besides flour, eggs, fat, and cabbage. If there were no eggs available, the dumplings were simply made with water. You can also add sauerkraut, which you’ve previously fried in a pan. I then add a little sugar to the cabbage so it doesn’t become too sour.
