Ingredients for 12 servings:
- 12 slices of toast (large slices)
- 3 onions
- 600 g mushrooms, small
- 600 g tomatoes (small vine tomatoes)
- 40 g butter
- some salt and pepper, freshly ground
- 400 g cheese (Gouda)
- 1 bunch of chives, cut into fine rolls
- Oregano, shredded
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Cut the crusts off the slices of toast and press them into baking cups (approx. 10 cm in diameter). Place them on the oven rack. Bake at 200°C (preheated) for 5-6 minutes. Remove the toast shells from the cups and let them cool. Finely dice the onions and clean and slice the mushrooms. Dice the tomatoes. Melt the butter, fry the diced onions until golden brown, add the mushrooms and fry them too. Then place the vegetables in a bowl, add the diced tomatoes, and season everything with salt, pepper, and oregano. Cut the cheese into small cubes, add it to the vegetable mixture along with the chives, and fill the bread baskets. Place the bread baskets on a baking sheet on the middle shelf of the oven. Bake at 190°C (preheated) for 10-12 minutes. Serve the bread baskets hot. If you don’t have suitable baking cups, you can also make simple sandwiches.
