Fruity potato salad

Ingredients for 8 servings:

  • 1 kg jacket potatoes, from the previous day
  • 500 g tomatoes, peeled
  • 400 g pineapple, pieces, from the can
  • 4 bananas
  • 2 lemons, juice
  • 3 tsp mustard
  • 3 tbsp lemon juice
  • 2 cups sour cream
  • 400 g mayonnaise
  • Salt and pepper, freshly ground
  • Paprika powder, sweet
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the potatoes. Deseed and dice the tomatoes. Peel and slice the bananas, and drain the pineapple pieces. Place everything in a bowl and drizzle with lemon juice. For the marinade, combine the mustard, lemon juice, sour cream, and mayonnaise and season with salt, pepper, sugar, and paprika. Mix the marinade with the salad ingredients and let the salad marinate for a while.
