Dutch Cherry Cream Cake
The perfect dutch cherry cream cake recipe with a picture and simple step-by-step instructions.
Floors
- 90 g Sugar
- 3 Eggs
- 90 gr Flour
- 1 tsp Baking powder
- 2 Pkg Puff pastry ready from the refrigerator
filling
- 500 ml Cream
- 2 Pkg Cream stiffener
- 2 Pkg Vanilla sugar
- 1 Glass Cherries
- 2 El Food starch
- 3 El Sour cherry jam
- 2 El Powdered sugar
Prepare floors
- Mix the sugar and eggs into a foamy mixture
- Carefully fold in the flour and place in a greased springform pan. At 180 ° C approx. 15-20min. Then let the bake cool down.
- Cut out circles from the puff pastry with the help of the springform pan (I took 20cm), cut with a knife and leave it at 200 ° C for about 12 minutes. To bake. After baking, press flat carefully, not by hand, HOT !!!
- Carefully cut the cooled cake base in half (preferably with sewing thread).
- Put the jam in a saucepan and gently warm it up. When it’s hot, brush evenly over a puff pastry base and set aside. That’ll be the lid!
- Place the other puff pastry base in the springform pan, spread the hot jam and place one of the cake bases on top.
- Mix powdered sugar with 2 teaspoons of water (you have to fiddle a little with the consistency) and coat the dried puff pastry base with it.

- Put the cherries in a saucepan, set aside 12 beautiful cherries and bring to the boil, collect some kirsch and stir with the cornstarch. As soon as the cherries are boiling, stir in the starch, bring to the boil again and let cool down completely.
- Whip the cream in 2 stages with 1 pkg of cream stabilizer and 1 pkg of vanilla sugar each and also chill until ready to use.
Assemble
- When all the ingredients have cooled down, you can start. Take the springform pan with the puff pastry base and the cake base placed on top. Put the cream in a piping nozzle, or if not there, put the freezer bag, cut off the corner and squirt 2 strands of cream in a ring around the outer edge.
- Now fill the cold, thickened cherries into the empty cavity in the middle, then carefully place the 2nd cake base on top.
- Do the whole thing again, and at the end I smeared the cherries with another thin layer of cream.
- Then cut the lid into 12 pieces and carefully place on the cake.
- Put a whipped cream on the edge of each piece and garnish with a cherry.
