Dutch matjes with green bean salad

Ingredients for 4 servings:

  • 8 herring fillets
  • 2 m.-large tomato(s)
  • 200 g green beans
  • 2 small onions, young
  • 1 tbsp white wine vinegar
  • 1 tbsp vegetable oil
  • 1 tsp mustard
  • e.g. salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Herring specialty from Holland

Matjes can be served as an appetizer in a variety of ways, such as with this green bean salad. Cook the beans in salted water for about 12 minutes, drain, and rinse with cold water. Finely slice the tomatoes and young onion. For the vinaigrette, mix the vinegar, oil, mustard, and pepper (no salt), and season the beans and tomatoes separately. Place the beans in the center of the plates. Arrange the tomato slices around the beans. Place two matjes fillets on top of each of the beans and garnish with the onion rings.
