Ingredients for 2 servings:
- 4 eggs
- 180 ml milk
- 90 g flour
- 1 pinch of salt
- 80 g butter
- 20 g Parmesan, grated
- 1 garlic clove(s)
- ½ handful of herbs of your choice, fresh
- 100 g smoked salmon, sliced
- 50 g crème fraîche
- 1 pinch(s) black pepper from the mill
Instructions
Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Oven pancakes with smoked salmon topping
Preheat the oven to 230°C (top/bottom heat) with a cast iron skillet. For the batter, mix the eggs, milk, flour, and a pinch of salt in a bowl until smooth. Let the batter rest briefly at room temperature. Once the skillet is hot, melt the butter in it. Then pour in the batter. Sprinkle the grated garlic, Parmesan cheese, and some of the fresh herbs evenly over the top. Return the skillet to the oven and bake for 15-20 minutes at 230°C (450°F). Do not open the oven during this time. Once baked, scatter the smoked salmon, crème fraîche, and the remaining herbs over the finished dish. Season with freshly ground black pepper and serve immediately.
