East Frisian bean soup (Kinnertön)

Ingredients for 1 servings:

  • 250 g raisins, unsulfured
  • 100 g rock sugar (Kluntje)
  • 700 ml brandy (East Frisian brandy)
  • 1 shot of arrack or rum

Instructions

Working time approx. 30 minutes; Rest period approx. 14 days; Total time approx. 14 days 30 minutes

Wash the raisins, dry them, and place them in a large container. Sprinkle the Kluntje (a kind of raisin) over the top, fill with brandy, and finish with a dash of arrack or rum. Let it steep for 14 days, until the raisins have absorbed the brandy. Stir the raisins occasionally or turn the jars upside down. In East Frisia, this drink is served to celebrate the birth of a child. Bean soup is essential for an East Frisian cake.
