Ingredients for 1 servings:

  • 250 g rock sugar
  • 375 g flour, type 405
  • 500 ml water
  • 125 g butter or margarine
  • 3 eggs
  • 3 packets of vanilla sugar
  • 1 tsp anise powder, optional AND/OR:
  • 1 tsp cardamom powder, optional

Instructions

Working time approx. 3 hours; Rest time approx. 6 hours; Total time approx. 9 hours

Holiday waffles or New Year’s waffles, you need a special waffle iron

Melt the rock candy in water and add the butter. Once cooled, combine with the remaining ingredients to form a batter. Let the batter stand overnight (at least 6 hours) and then bake waffles in batches. Immediately after baking, roll them over a piece of wood to form logs. Caution! This has to be done very quickly, as it’s easy to burn your fingers. Some bakers use up to five waffle irons at once, but I can only manage with three. Let the waffles cool completely and then pack them in metal containers.
