Edamame hummus with green coriander

Ingredients for 1 servings:

  • 300 g soybeans, green (edamame)
  • salt water
  • 3 cloves garlic
  • 2 tsp tahini
  • 100 ml water
  • 10 stalks of coriander leaves, approx. 100 ml
  • 60 ml lemon juice, freshly squeezed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp cumin powder
  • tsp cayenne pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Cilantro Edamame Hummus

Place the edamame in a large pot and bring to a simmer in salted water with the lid on. Simmer over medium heat for about 5 minutes, until tender, then drain. Chop the garlic cloves with a food processor. Using an immersion blender, puree the edamame, tahini, water, coriander leaves, lemon juice, olive oil, salt, cumin, cayenne pepper, and garlic until smooth.
