Ingredients for 1 servings:

  • 4 eggs
  • 200 g sugar
  • 200 g flour
  • possibly chocolate sprinkles or raisins, cocoa powder or poppy seeds

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Beat the eggs and sugar with a hand mixer until frothy and firm. Sift the flour over the egg mixture and then carefully fold in. Line two baking sheets with baking paper and use a tablespoon to drop small dollops of dough onto the sheets. Leave enough space between each one to prevent them from becoming giant cookies. Sprinkle with chocolate sprinkles, granulated sugar, raisins, cocoa powder, or poppy seeds—the sky’s the limit. Bake at 180°C (convection oven) for 8-10 minutes. If you like them a little crispier, leave the cookies in the oven for 1-2 minutes longer. Let them rest briefly on the baking sheet and then, ideally using a spatula, transfer them to a wire rack to cool.
