Egg salad with herring

Ingredients for 4 servings:

  • 7 eggs
  • 2 herring fillets
  • 1 large onion(s)
  • 250 g mayonnaise (do not use light mayonnaise, otherwise it will be watery)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Hard-boil the eggs, slice them first, then quarter them in an egg slicer. Finely chop the herring and onion. Mix everything with the mayonnaise. We like it best when it’s been left to marinate for a day.
