Ingredients for 1 servings:

  • 300 g speculatius (spiced)
  • 175 g butter
  • 11 sheets of gelatin
  • 500 g quark
  • 270 g sugar
  • 300 ml egg liqueur
  • 2 cans of tangerines
  • 500 g cream

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 30 minutes

No-bake Christmas cake

Melt the butter. Crumble the speculatius biscuits and mix with the butter. Brush a cake plate with oil, butter, or non-stick spray. Place a 28 cm diameter baking frame on top. A star-shaped baking frame also looks great. Press the crumb mixture into the plate to form the base and chill. Soak 8 sheets of gelatin. Mix the quark and sugar. Dissolve the gelatin, mix with 100 ml of egg liqueur, stir into the quark mixture, and chill until the mixture begins to set. Drain the mandarins. Whip the cream until stiff. Stir the mandarins into the quark mixture, fold in the cream. Smooth the pan and chill for about 3 hours. Soak 3 sheets of gelatin. Heat 200 ml of egg liqueur, dissolve the gelatin in it, and chill. Spread over the cream and chill for about 2 hours. I always make the cake the day before; the flavor is even better, more intense, because the speculatius base permeates the cake. If desired, you can sprinkle the cake with cocoa and cinnamon and use motifs like stars, angels, or Christmas trees.
