Eggplant and sour cream pizza

Ingredients for 2 servings:

  • 2 servings of pizza dough
  • 1 cup sour cream
  • 1 ball of mozzarella
  • 1 eggplant(s)
  • 1 red bell pepper(s)
  • 6 cherry tomatoes
  • Salt
  • pepper
  • Pizza seasoning

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Prepare the pizza base as desired, for example, place two thin, round pizza bases on baking sheets lined with baking paper. Wash the eggplant, remove the stem, and cut into slices about 1 cm wide. Cook the slices in a pot using the steamer insert for about 10 minutes; salt is not necessary. Cut the mozzarella into thin slices. Wash and slice the tomatoes, wash and trim the bell peppers, and cut them into short, thin strips. Spread the sour cream on the pizza bases. Spread the mozzarella on top and season with salt, pepper, and pizza seasoning. Arrange the eggplant slices on the pizza, then place the other vegetables on top and/or in between. Season again. Add more or less of the individual ingredients to taste. Bake in the oven at 230 degrees Celsius for about 13 minutes.
