Ingredients for 4 servings:
- 800 ml milk
- 200 ml egg liqueur
- 1 packet of pudding powder (vanilla)
- 5 tbsp sugar
- 110 g rice pudding

A ‘must’ for all eggnog lovers
Bring 700 ml of milk to a boil with the eggnog and sugar. Mix the pudding mix with the remaining 100 ml of milk. When the eggnog milk is boiling, remove from the heat and stir in the mixed pudding mix. Bring back to a boil and then add the rice pudding. Let everything simmer on the lowest heat for about 30 minutes – stirring occasionally to prevent it from burning. Tip: Alternatively, you can simmer the whole thing on low heat for about 5 minutes, then cover the pot and set aside for about 1-2 hours so the rice can swell. Delicious hot or cold!
