Eggplant "Dragon's Eye"

Ingredients for 2 servings:

  • 1 large eggplant(s)
  • 3 large tomatoes
  • 2 cloves garlic
  • 1 sprig of parsley
  • 1 large egg(s)
  • some salt
  • 2 tbsp mayonnaise

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

vegetarian

Cut a large eggplant into approximately 1 cm thick slices, season with salt, and let stand for 10-15 minutes. Beat an egg well and add a little salt. Heat a little oil in a pan. Dip the eggplants thoroughly into the egg mixture and fry in the oil until golden on both sides. Remove from the pan and let cool. Squeeze some garlic onto each eggplant slice using a garlic press and spread it over the slices. Spread with mayonnaise and then top with tomato slices. Season with salt and garnish with parsley.
