Eggs in bacon and mustard sauce

Ingredients for 4 servings:

  • 8 eggs
  • 75 g bacon, streaky
  • 2 onions
  • 1 tbsp flour
  • 375 ml milk
  • 1 bunch of chives
  • 100 g mustard, medium hot
  • Salt
  • Sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Boil eggs, soft-boiled or hard-boiled, as desired. Finely dice bacon and onion. Sauté bacon until translucent. Add onions and fry until light yellow. Dust with flour, mix with milk, and simmer gently for about 10 minutes. Peel eggs and finely chop chives. Mix sauce with mustard and season with salt and sugar. Reheat eggs in the sauce, but do not boil. Sprinkle with chives. Serve with boiled potatoes and a green salad.
