Blueberry Vanilla Cake

Ingredients for 1 servings:

  • 250 g blueberries
  • 75 g butter
  • 1 vanilla pod(s)
  • 3 eggs
  • 150 g sugar
  • 1 packet of vanilla sugar (bourbon)
  • 1 pinch of salt
  • 150 g flour
  • 1 tbsp, leveled baking powder

Working time approx. 15 minutes; Total time approx. 15 minutes

Loaf cake with blueberries and real vanilla

Grease a cake pan (loaf pan) and dust lightly with flour, then chill. Slowly melt the butter in a small pan, slit the vanilla pod lengthwise, and add the scraped seeds. Briefly beat the eggs, sugar, vanilla sugar, and salt in a bowl, then combine the flour and baking powder, sift them in, and stir in. Mix the butter into the batter. Pour 1/3 of the batter into the pan, scatter half the blueberries on top, then repeat this process and finish with the batter. Bake at 180°C (electric oven) on the second-lowest rack for 40-45 minutes. Note: If using frozen berries, they should first be thawed and then dried on kitchen paper! This also works with other types of berries.
