Eggs in Mustard Sauce

- 4 Eggs
- 30 g Butter
- 30 g Flour
- 400 ml Vegetable broth
- 100 ml Cream
- 125 g Mustard
- Pepper
- Heat the butter in a saucepan
- Add the flour and sweat while stirring constantly, do not let it brown
- Now pour in the vegetable stock, add the cream and season with pepper
- Bring to the boil briefly and then stir in the mustard
- Boil the eggs for about 7 minutes
- Boiled potatoes are served with it
