Einkorn Salad

The perfect einkorn salad recipe with a picture and simple step-by-step instructions.

  • 5 tablespoon Einkorn
  • 1 piece Ginger
  • 1 piece Chili
  • Paprika
  • 1 Spring onions fresh
  • 2 Handful Lamb’S lettuce
  • 1 Clementine
  • 60 g Buffalo mozzarella
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Honey
  • Salt and pepper
  • 1 tablespoon Chopped parsley
  1. Chop the garlic, ginger and chilli. Add to the einkorn and cook according to the instructions on the packet, drain and let cool.
  2. Dice the peppers, cut the spring onions into rings and chop the parsley. Season with salt and pepper and set aside.
  3. Peel the clementine and collect the juice. Place the lamb’s lettuce and the clementine slices on the edge of the plate. Drain the mozzarella well, cut into slices and also place on the edge of the plate.
  4. Place the einkorn in the middle of the plate.
  5. Mix the juice of the clementine with the olive oil and honey, season with salt and pepper and drizzle over the salad.
  6. Einkorn is still slightly firm to the bite after cooking and tastes slightly nutty.
