Elderberry balsamic vinegar

Ingredients for 1 servings:

  • 600 ml balsamic vinegar, dark
  • 500 g elderberries
  • 300 g sugar
  • stalk(s) cinnamon
  • Allspice
  • Carnation(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes just under 1 liter of finished vinegar

Heat the balsamic vinegar and sugar until melted. Hang a spice bag containing a cinnamon stick, allspice berries, and cloves in the pot and simmer for 5 minutes. Add the elderberries and simmer for another 10 minutes. Let the mixture cool, remove the spice bag, and strain the mixture through cheesecloth. Then bottle. It tastes especially good with hearty salads, such as lamb’s lettuce, and makes a great gift.
