Ingredients for 4 servings:
- 1 mango(s), ripe (300 g)
- 1 lime(s), untreated
- 100 ml elderberry syrup
- 250 ml buttermilk
- 250 ml water
- 200 g blueberries, fresh or frozen
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Peel the mango, remove the stone, and roughly dice the flesh. Finely grate the zest from the lime and then juice the lime. Puree the mango flesh with the elderberry syrup, lime juice and zest, buttermilk, and 250 ml water. Place 1/4 of the blueberries into each glass and top with the elderberry-mango buttermilk. Serve with spoons.
