Ingredients for 1 servings:
- 20 elderflower heads
- 3 liters of orange juice
- 4 packs of Gelfix (2:1)
- 2 kg sugar
Instructions
Working time approx. 25 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 25 minutes
Fill a large bucket with elderflower heads (shake well) and top with orange juice. The orange juice must be very good fresh juice—please don’t use juice from the discount store, although that tastes very good too. But the jelly will be fantastically better. Let it stand for a day. The orange juice will then have absorbed the elderflower flavors. Strain (makes about 2.5 liters of juice) and cook with the gel-fix and sugar according to the package instructions. Pour into rinsed jars while still hot. The finished jelly tastes like pure summer. Note: Unfortunately, orange juice doesn’t contain pectin, which is why it needs so much “helping.”
