Ingredients for 1 servings:
- 7 large elderflower umbels
- 7 liters of water
- 1 kg sugar
- 2 large lemon(s), untreated and 40 g tartaric acid

Lilac blossom sparkling wine, elderflower sparkling wine
Do not wash the elderflowers, but carefully remove any pests that may be present. Wash the lemons with hot water and slice them thinly. Combine the sugar and tartaric acid in a large clay container, fill with water, and stir well until the sugar and tartaric acid have dissolved. Then add the elderflowers and lemon slices. Cover the clay container with a lid. Stir the mixture daily. After 7 days, strain the juice through a fine sieve or cloth and bottle. Seal the bottles immediately and store in a dark, but not too warm place. The lilac blossom sparkling wine is now ready but contains only a small amount of alcohol. The longer it is stored (up to 2 years), the higher the alcohol content will be.
