Emily's mushrooms on arugula

Ingredients for 4 servings:

  • 250 g arugula
  • 400 g mushrooms
  • 100 ml cream
  • 1 onion(s)
  • 200g Gorgonzola
  • 3 tbsp olive oil
  • Salt and pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Wash the arugula, cut into bite-sized pieces, and divide between 4 plates. Dice the onion and sauté in a pan with olive oil until translucent. Clean and slice the mushrooms, add them to the pan, and fry well. Add the cream and bring to a boil. Season with salt and pepper. Let everything cool slightly and serve lukewarm on top of the arugula. Cut the Gorgonzola into small cubes and scatter over the top.
