Ingredients for 1 servings:

  • 200 g pitted dates
  • 125 g cashew nuts
  • 100 g walnut kernels
  • 75 g Brazil nuts
  • 100 g desiccated coconut
  • 1 tsp cinnamon
  • 1 pinch(s) of bourbon vanilla bean(s)
  • 2 tsp cocoa powder
  • e.g. maple syrup
  • Desiccated coconut for rolling, optional

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Snack, vegan, sugar-free, healthy

Pour boiling water over the dates, let them swell for 5 minutes, and then drain them in a sieve. Get a high-powered blender ready, add the dates, and blend vigorously. Once the dates are well blended, add the remaining ingredients and blend until a workable dough forms. If the dough is still a little dry, simply add a little maple syrup. If it’s too runny, add some nuts. Form the dough into small balls with your hands and roll in desiccated coconut, if desired. Store the balls in the refrigerator. Alternatively, they can be frozen and thawed in portions.
