Ingredients for 1 servings:

  • 100 g cashew nuts
  • 100 g pitted dates
  • 1 carrot(s)
  • 50 g maple syrup
  • 100 g coconut flakes
  • 100 g buckwheat flour
  • tbsp coconut flakes

Working time approx. 20 minutes; Rest time approx. 3 hours 30 minutes; Total time approx. 3 hours 50 minutes

A healthy snack alternative, even for children. Makes 36 balls.

Soak the cashews and dates in water for at least 3 hours. Then place them in a deep bowl. Finely grate the carrot and add it with the maple syrup, then puree the mixture. Add the coconut flakes and buckwheat flour. Mix everything well and refrigerate for half an hour. Using a teaspoon, scoop out pieces of dough and form them into balls. I weigh the dough. If you weigh 18 grams per ball, you get 36 balls. Roll the balls in coconut flakes. Store in the refrigerator or, for longer, in the freezer.
