Ingredients for 4 servings:
- ½ cup(s) hazelnuts, chopped
- ½ cup(s) almonds, chopped
- ½ cup(s) dried fruit (raisins, dates, apricots, cranberries, etc.)
- 2 tbsp desiccated coconut, possibly also flower pollen
- ½ cup(s) fruit juice
- 70 wafers
- ½ cup(s) seeds (sesame, sunflower seeds, pumpkin seeds, etc.)
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Trail mix compact
Pour enough juice over the dried fruit to just cover it and let it soak for a short while. Add the kernels and puree everything. You can buy chopped almonds and hazelnuts, and desiccated coconut is also available ready-made. However, it is fresher and healthier to chop them yourself in a food processor before preparing the mixture. Add the nuts to the fruit mixture. If you like and have it at home, you can also stir in a few teaspoons of bee pollen, depending on your taste. Place a heaped teaspoon of the mixture onto a baking sheet and press another on top. This recipe is ideal for a healthy snack between meals, at your desk, at school, or on the go. These energy snacks are easy to make in advance and can be stored in the refrigerator for up to a week. They are very rich in vitamins and minerals, but not exactly low in calories! By varying the dried fruit and fruit juice, you can always create new flavors.
