Ingredients for 1 servings:

  • 100 g butter, soft
  • 125 g brown sugar
  • 1 egg(s)
  • 50 g oat flakes, wholegrain
  • 150 g flour
  • 50 g desiccated coconut
  • ¼ tsp baking powder
  • 3 tbsp brown sugar
  • 4 tbsp desiccated coconut

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Cream the butter and sugar until creamy, then stir in the egg. Combine the oats with the flour, desiccated coconut, and baking powder, and stir in. Cover the dough and chill for about 2 hours. Preheat the oven to 175°C (350°F) and line two baking sheets with parchment paper. Mix the brown sugar and desiccated coconut. Form the dough into small balls, then press them into the sugar and desiccated coconut mixture. Place each ball on the baking sheets and bake one after the other on the middle rack of the oven for about 15 minutes. Let cool on the baking sheet.
