Ingredients for 4 servings:
- 250 g mixed nuts and seeds, e.g. walnuts, sesame…
- Butter, for the mold
- 100 g shallot(s), chopped
- 400 g tomatoes, peeled
- 3 eggs, whisked
- 150 g Cheddar cheese, aged, grated
- 1 tsp thyme
- 1 tsp sage, chopped
- 1 tbsp parsley, chopped
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- Salt and pepper, black
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes
Roast the nuts in a dry pan over medium heat, stirring occasionally, until golden brown and fragrant. Let cool. Chop very finely in a food processor. Preheat oven to 180°C. Grease a loaf pan with butter. Line with baking paper. Grease the paper additionally. Mix the nuts, shallots, tomatoes, eggs, cheese, herbs, soy sauce, lemon juice, salt, and pepper. Pour into the loaf pan. Bake for 45-60 minutes, until firm and golden brown. Let cool slightly. Turn the nut roast out onto a serving plate and remove the paper. Serve with herbs and tomato sauce.
