The quantities given yield approximately 1.6 liters of jam. Rinse the citrus fruits with hot water and pat dry. Grate the peel coarsely or finely and set aside. Halve the citrus fruits, remove the seeds, and cut into very thin slices. Cover and bring to a boil with the half liter of water. Simmer over low heat for about 40 minutes, stirring regularly. Remove from the heat and let cool. Add the gelling sugar and the grated citrus peel to the pot and bring to a boil while stirring. Depending on your taste, the citrus peel can be added at the very end. Boil briskly for about 4 minutes, stirring constantly. Pour the hot mixture into twist-off jars and seal immediately. Shelf life: 12 months
