Ingredients for 1 servings:
- 50 g couscous
- 1 dl vegetable broth
- 1 tsp olive oil
- 1 tbsp lemon juice
- 50 g yogurt
- 3 small tomatoes
- e.g. mint
- salt and pepper

Pour boiling vegetable stock over the couscous, cover, and let stand for 5 minutes. Mix together the yogurt, lemon juice, olive oil, salt, and pepper, stirring in the mint if desired. Deseed and dice the tomatoes if desired (the salad will become a bit more liquid if the tomatoes are left unseeded). Mix everything together and season to taste with salt and pepper.
