Ingredients for 4 servings:
- 100 g wild garlic, fresh
- 5 m.-sized potatoes
- 1 onion(s)
- 1 liter vegetable broth
- 50 ml cream
- salt and pepper
- 2 tbsp butter
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Peel and dice the onion, peel the potatoes, and cut into pieces. Roughly chop the wild garlic, reserving four leaves for garnish. Sauté the onions in a pan with butter until golden brown. Pour in the stock and add the potatoes and wild garlic. Season with salt and pepper and simmer gently until the potatoes are tender. Then purée the soup with a hand blender and finally stir in the cream. Bring back to a boil briefly and serve hot, garnished with the wild garlic.
