- 350 ml soy milk (soy drink), light
- 2 tsp cocoa powder, heavily deoiled
- sweetener
- 2 tsp locust bean gum
- e.g. cinnamon
- e.g. cardamom
- n. B. Clove powder
- e.g. ginger, pickled

Combine the soy milk and cocoa powder in a saucepan and stir over medium heat until the cocoa is completely dissolved. Season to taste. Add cinnamon, cardamom, or clove powder, if desired. Stir in the locust bean gum and bring to a boil while stirring. Pour into bowls and let cool. I sometimes add chopped pickled ginger, which is also delicious. The entire pudding has approximately 125 kcal. Light soy milk: 29 kcal/100 ml; Cocoa powder: 17 kcal/10 g.
