Ingredients for 1 servings:

  • 150 g flour
  • 50 g sugar
  • 100 g butter
  • 1 egg yolk
  • 1 pinch of salt
  • 1 tbsp water, cold
  • 48 Confectionery (Toffifee)
  • 2 egg whites
  • 1 tsp lemon juice
  • 160 g sugar, gold glitter for decoration

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

For the dough, knead the first five ingredients with 1 tablespoon of cold water. Wrap in cling film and let rest in the refrigerator for about 1 hour. Roll out the dough between the cling film and cut out small circles slightly larger than a Toffifee (chocolate side). Place on a baking tray lined with baking paper. Place a Toffifee, rounded up, in the center of each circle. Beat the egg whites with lemon juice until stiff. Slowly add the sugar. Transfer the mixture to a piping bag fitted with a small nozzle and pipe around the Toffifee to form a mound, forming a small peak. Sprinkle with gold glitter. Bake in a preheated oven (top/bottom heat 150°C, gas mark 1, fan oven 130°C) for about 15-20 minutes, then let cool. The gold glitter can be omitted, but it looks very pretty.
