Fake cucumbers

Ingredients for 1 servings:

  • 1 large zucchini, peeled, pitted and diced
  • 2 large onions, quartered
  • some dill, dried
  • some chili, dried
  • some mustard seeds
  • some peppercorns
  • 2 liters of water
  • ½ liter vinegar, (10%)
  • 50 g salt
  • 150 g sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and deseed the zucchini, and cut into even-sized cubes. Peel and quarter the onions. Now prepare the jars: In each jar, add zucchini, 1/4 onion, 1 tbsp mustard seeds, 4 peppercorns, 1 small dried chili, and 1 tbsp dried dill or 1 sprig. The liquid measurements are based on 6 standard pickle jars, so reduce or increase accordingly. Bring the water, vinegar, sugar, and salt to a boil in a saucepan and pour over the zucchini while still hot. Close the jars tightly and turn them upside down, let them infuse, or reduce them. The zucchini taste like cucumbers, but the chili gives them a nice spicy flavor, making them ideal as an addition to solyanka.
