Ingredients for 2 servings:

  • 700 g cauliflower
  • 2 tbsp, leveled butter
  • Salt
  • possibly nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

Wash the trimmed cauliflower, pat dry, and divide into florets. Place the florets in a blender and process on high. Depending on your blender, it’s best to do this in 2 to 3 smaller batches. Make sure the grains are about the size of rice grains, not mushy. Place in a microwave-safe bowl, cover, and cook on full power for about 5-8 minutes (depending on the microwave’s power). Note: Do not add any water! Give it a quick shake about halfway through cooking. At the end of the cooking time, season with butter, salt, and nutmeg. This pairs particularly well with dishes with plenty of sauce. It’s important to cover the cauliflower in the microwave, otherwise too much of its moisture will be lost.
