Fanned chicken breast à la Heike

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 small zucchini
  • 8 slice(s) smoked cheese
  • salt and pepper
  • some sweet paprika powder
  • ½ jar white wine
  • some butter flakes
  • 2 sprigs rosemary
  • 2 sprigs of thyme

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes

Italian style

Wash the chicken breast and dry with kitchen paper. Cut crosswise slices into the chicken breast at intervals of about 1 cm, but do not cut all the way through. Cut the zucchini into thin slices. Halve the cheese slices (round). To fill, fold the half cheese slice into a quarter slice, then place a zucchini slice under and over the cheese. Cut off a little of the bottom end to create a flat surface for easier filling. Now place the zucchini filling into each cut. Grease a baking dish and spread the remaining zucchini slices and trimmings on the bottom of the dish. Place the chicken breast in the dish. Season with salt, pepper, and paprika. Drizzle with the white wine. Sprinkle the rosemary and thyme between the meat. Place knobs of butter on top. Bake in an oven preheated to 200°C for 40-50 minutes, depending on the thickness of the meat.
