Farfalle with cocktail tomatoes and mint

Ingredients for 4 servings:

  • 400g farfalle
  • 400 g cocktail tomatoes
  • 3 tbsp extra virgin olive oil
  • 1 bunch of mint
  • 1 clove(s) garlic
  • 2 tbsp pesto
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the farfalle according to the instructions, drain, and set aside. Gently heat the olive oil in a pan, halve the cherry tomatoes, and sauté them gently in the olive oil. Add the finely chopped garlic clove. Finely slice the mint and add it to the cherry tomatoes. Stir in the pesto and season with salt and freshly ground pepper. Add the farfalle to the pan and stir it into the tomato and mint mixture. Serve on a deep plate. I recommend serving with a well-chilled Pinot Bianco.
