Ingredients for 2 servings:

  • 200 g pasta (macaroni)
  • 200 g mushrooms
  • 2 tbsp olive oil
  • 1 garlic clove(s)
  • 200 g cooked ham
  • 2 spring onions
  • 4 eggs
  • 50 ml cream
  • 40 g Parmesan, grated

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 47 minutes

Cook the macaroni in salted water according to the package instructions. Drain and rinse. Preheat oven to 180°C fan/gas mark 3. Clean the mushrooms, peel and finely chop the garlic. Dice the ham and clean, wash, and slice the spring onions. Heat olive oil in a pan and sauté the mushrooms. Add the garlic, ham, and spring onions and cook for about 2 minutes. Add the pasta to the pan and mix well. Whisk the eggs with the cream, pour over the pasta, and sprinkle with Parmesan cheese. Bake in the preheated oven for about 12 minutes.
