Ingredients for 1 servings:
- 3 eggs
- ½ cup mineral water
- 1 carrot(s), cleaned, cut into strips
- 1 bell pepper(s), cleaned, cut into strips
- 1 medium-sized potato(s), cooked, sliced
- 1 m.-sized tomato(s), peeled, sliced
- ½ bunch parsley
- Parmesan, as desired
- ½ bunch chives
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Whisk the eggs with mineral water. Briefly toss the above ingredients in butter, add a little broth, let it reduce, and then pour the egg mixture over the mixture. Cover and let it set for about 4-6 minutes. Then place the pan in the oven and broil briefly. Turn out onto a plate and sprinkle with Parmesan cheese and herbs.
