Ingredients for 1 servings:

  • 3 eggs
  • ½ cup mineral water
  • 1 carrot(s), cleaned, cut into strips
  • 1 bell pepper(s), cleaned, cut into strips
  • 1 medium-sized potato(s), cooked, sliced
  • 1 m.-sized tomato(s), peeled, sliced
  • ½ bunch parsley
  • Parmesan, as desired
  • ½ bunch chives

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the eggs with mineral water. Briefly toss the above ingredients in butter, add a little broth, let it reduce, and then pour the egg mixture over the mixture. Cover and let it set for about 4-6 minutes. Then place the pan in the oven and broil briefly. Turn out onto a plate and sprinkle with Parmesan cheese and herbs.
