Ingredients for 2 servings:
- 100 g sausage or streaky bacon
- 2 onions
- 4 eggs
- 4 tbsp milk
- 1 pinch of salt
- black pepper
- 2 tomatoes
- ¼ bunch chives
- 2 sprigs of parsley
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Dice the sausage or bacon and fry in a pan. Add the peeled, finely chopped onions and sauté until golden brown. Whisk the eggs with the milk, salt, and pepper. Pour one layer into the hot pan. Place the washed, sliced tomatoes on top and pour the second layer of egg mixture over them. Let them set, turning once. Serve sprinkled with washed, chopped chives and parsley.
