Scrambled eggs with peas

Ingredients for 2 servings:

  • 75 g peas, frozen
  • 3 eggs
  • 1 small onion(s), approx. 35 g each
  • Salt and pepper, white
  • Paprika powder, sweet
  • 1 tbsp cream
  • some margarine for frying
  • 1 tbsp parsley, chopped for sprinkling

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Place the frozen peas in a small bowl and pour boiling water over them. After about 5 minutes, pour the peas into a sieve and let them drain. Crack the eggs into a bowl. Add salt, pepper, paprika, and cream, and mix everything with a fork. Peel the onion and dice it into fairly small pieces. Heat the margarine in a pan, add the diced onion, and fry until nicely browned. Add the peas to the pan with the onions and fry for about 1 minute. Now add the egg mixture and let it set, stirring frequently. Serve the scrambled eggs sprinkled with parsley.
